Toffee Strawberries

Ingredients

•    1 cup caster sugar
•    1/4 cup water
•    2 punnets of strawberries

Directions

Dissolve the sugar in the water in a small, heavy saucepan and boil without stirring - just swirl the pan around until the sugar syrup turns a golden caramel colour. (To test - place a little mixture in a glass of cold water).  Remove from the heat and dip strawberries into the syrup, holding them by the stalk. Then leave to harden on a non-stick baking paper.

Fresh Strawberry Pie

Ingredients

•    1 cup sugar
•    500grams strawberries, washed, hulled, and sliced
•    1/4 cup water
•    1 tablespoon butter
•    2 tablespoons plus 1 teaspoon cornstarch

Directions

Combine sugar and strawberries; let stand for a few hours, until juicy. Drain juices off; transfer to saucepan, and bring to a boil. Mix together the water, butter, and cornstarch. Add to the strawberry juice mixture; continue cooking, covered, over low heat for 2 minutes. Cool slightly and stir in strawberries. Pour into baked pie shell; chill thoroughly. Top with whipped cream topping or purchased whipped topping. Keep leftovers covered, in refrigerator.

Spinach and Strawberry Salad

Ingredients

•    2 bunches spinach, rinsed and torn into bite-size pieces
•    2 punnets of strawberries
•    ½ cup roughly chopped walnuts
•    1/2 cup vegetable oil
•    1/4 cup white wine vinegar
•    1/4 cup white sugar
•    1/4 teaspoon paprika
•    2 tablespoons sesame seeds
•    1 tablespoon poppy seeds

Preparation

In a large bowl, toss together the spinach, strawberries and walnuts. Then in a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach, strawberries and walnuts, and toss to coat.

Strawberry Daiquiri

Ingredients

•    50ml of white rum
•    10ml freshly squeezed lime juice
•    1 punnet of strawberries
•    Sugar syrup to taste

Preparation

Stir 500g sugar into 250ml water and bring to boil, stirring constantly. Cool and refrigerate. You can make this in a shaker but it's best done in a blender. Mix together (best done in a blender) all the ingredients including cooled sugar syrup along with four ice cubes. Pour into a chilled margarita glass and garnish with a strawberry.
